I love browsing blogs and Pinterest for new recipes. I don't get to bake as often as I would like as my schedule is just too busy, but I still like to try something new when I get the chance.
My fellow scrapbooker and blogger friend, Rosanne, often posts delicious looking recipes and she had one recently for Peach Praline Muffins! I love peach anything, and I had just bought some peaches at the market, so I gave her recipe a try. Oh my! They were seriously delicious!
The praline topping gives them just the right amount of sweetness and crunch and the peaches keep the muffins really moist!
Here is the recipe if you would like to try them for yourself :)
Praline Peach Muffins
Batter:
1 2/3 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup packed brown sugar
1/2 cup milk
1/3 cup vegetable oil
1 egg
1 teaspoon vanilla extract
1 cup chopped fresh peaches
1/2 cup chopped pecans
Preheat oven to 400.Combine flour, baking powder, and salt. In a large bowl, combine the brown sugar, milk, oil, egg, and vanilla. Stir in the dry ingredients just until moistened. Fold in peaches and pecans. Fill cups muffin cups two-thirds full.
Topping:
1/4 cup packed brown sugar
1/4 cup chopped pecans
1 tablespoon cold butter
In a small bowl, combine the topping ingredients until crumbly; sprinkle over batter. Bake for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Makes 12 muffins.
