Grilled Potatoes

A couple of friends have asked me to post the recipe for these delicious potatoes that we cooked on the grill.


They are really easy to do and you can use regular potatoes or mini potatoes like we did.  You can even use sweet potatoes for a tasty treat!

Grilled Potatoes

Ingredients

5 medium potatoes
3 tablespoons olive oil
1 tablespoon fresh thyme leaves (1 tsp. dried)
1 teaspoon fresh rosemary, chopped (1/2 tsp. dried)
2 small garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
1 teaspoon coarse or kosher salt

Directions

Preheat barbecue on medium, to a temperature of about 400 degrees F.

Cut potatoes into 1" chunks.  If using mini potatoes, you can cut into 1/2-inch slices.

In a medium bowl, toss the potatoes with olive oil and seasonings. Place in grill wok or on baking sheet and grill until tender and starting to brown,  20 -30 minutes, turning potatoes frequently.

Transfer to a platter and serve.  Yummm :)
